I would say that it's not our role to define what we are, or to define how we are what we are. It's our job to define why we are what we are.

You're asking yourself ';what makes a person who they are?'; - i.e, ';what is IT that makes a person who they are?'; - so, then you answer with a contradicting statement - (paraphrase) they can't always choose what they are, but they can choose the manner in which (or how) they are what they are.... yet, doesn't the way they are define what they are?
I agree with Bill, although, I'm not sure exactly what he's talking about when it comes to the ';unknown, mysterious';. The ';IT'; is the person themselves. We are defined only insofar as we act and we are ultimately responsible for EVERYTHING.

But, I would write it this way: ';We cannot apparentlly choose what we are given at birth--eye color, IQ, height we will grow to, skin color, and so on--but we can choose what we do with it. Heredity is raw material. The person we become, what we do with the heredity, depends on our decisions and experience (what we choose to do and even what we think and say and the experiences we endure). Beyond that, much of it is unknown, mysterious, etc.

To choose ';how'; you are, is to choose ';what'; you are. If you rob a store you are a thief. If you are a doctor you are a healer. If you drink too much you're a drunk. If you have a drink here and there you're a social drinker. We always have a ';choice'; as to ';how'; we are...?!
